Why you must eat itA big baked potato split lengthwise, the inside fluffed and worked with butter and melting cheese, then topped. Pick from the counter — tuna, corn, ham, broccoli, black pepper — and they pile it on the spot. The heat melts the cheese into strings, and you dig up from the bottom with a spoon. The cheese potato is a Western-leaning plate you find at Taiwan night markets, and Prince is one of its best-known stalls. Cheap and generous, it suits Shilin, a student quarter as much as a market. Toppings are often free to combine, and the more you pile on the livelier it gets. It comes hot, so it's easier to step aside and eat than to walk with it.
