Why you must eat itUnlike the homely khao soi of the lanes, Nimman's shops have calm interiors and let you pick portion and heat. Chicken thigh, beef or a vegetable khao soi comes with fried noodles and a small dish of garnishes. The broth is a touch refined, easy for travelers too. In an air-conditioned seat you can settle in with the bowl.
The Nimmanhaemin district is the newer town where cafes and restaurants gather. Kao Soy Nimman is a flagship of it, with a clean room and an English menu, good for a first northern meal. A little dearer than the old-city stalwarts, but easier to walk into for that. Prices and hours are a guide.
